Favorite Healthy(ish) Treats: Recipes and Taste Test

My latest Happy & Healthy(ish) video features some of my favorite sweet and healthy(ish) treats. Watch the video and find the recipes below.

Peanut Butter Cups

4 ounces unsweetened chocolate baking bar – 100% cacao
1/2 cup peanut butter
6 TBSP cup pure maple syrup

Melt all ingredients together. Place in muffin tin with liners.
Freeze for 20ish minutes until solid.Store these suckers in the fridge if you have any extra. We never do. 

Avocado Mousse

2 ripe avocados
1/2 cup cocoa powder
2 ounces melted

4 ounces unsweetened chocolate baking bar – 100% cacao
1/2 cup peanut butter
6 TBSP cup pure maple syrup

3 TBSP coconut milk (or preferred milk)
1/4 cup + 2 TBSP pure maple syrup
1/2 tsp vanilla extra
1/4 tsp  of salt

Sweet Potato Fries

Two large sweet potatoes
1/2 tsp smoked paprika
1/2 tsp granulated garlic
1/2 tsp black pepper
1 TBSP corn starch 
Two glugs of olive oil
Salt to taste (we go for hypertension)

Cut the sweet potatoes in even strips.
In a bowl, add your fries and cover with a glug or two of olive oil. Add in the dry mixture and toss. Cover your baking sheet with parchment paper.
Bake at 400 degrees for 20ish minutes

Coconut Popcorn
1/4 cup popcorn kernels
1 TBSP coconut oil (we add 4-5 TBSP melted after)
sea salt (to taste, we go until your taste buds go ZING)

We use a popcorn maker, but you could do stove top with a lid as well.
